dc.description.abstractThis study investigated the effect of post-harvest handling practices on the quality of coffee produced in Kihihi Sub County, Kanungu District, with the primary objectives of analyzing factors affecting coffee quality during post-harvest handling, assessing the impact of these practices on consumer preferences, and examining quality assurance practices. Employing a mixed-methods design, data were collected from 90 respondents, including coffee farmers and key informants, through structured questionnaires and in-depth interviews. Data revealed that wet processing, hand sorting, and sun drying were the predominant methods used, while qualitative data highlighted significant challenges such as limited access to modern equipment, inadequate drying facilities, and financial constraints. Consumer preferences were found to be heavily influenced by the consistency and sensory attributes of the coffee, with well-processed coffee receiving more favorable feedback. Quality assurance practices, including regular monitoring and adherence to best practices, were identified as crucial for maintaining coffee quality. The study concluded that addressing the identified challenges through investment in modern processing equipment, enhancing drying facilities, providing financial support, and offering continuous training could significantly improve coffee quality and market competitiveness. Recommendations emphasized the need for improved infrastructure, adoption of quality standards, and ongoing capacity building to sustain quality improvements and meet consumer expectations.
