dc.description.abstract | Irish potatoes are a staple food crop with global importance. Efficient peeling is a critical in processing potatoes for various food products. Traditional manual peeling is labor intensive and time consuming. This paper presents the design and development of an Irish potato peeling machine to improve efficiency and reduce manual labour requirements. The machine utilizes an abrasive peeling mechanism to remove potato skins while minimizing waste and damage to the potato flesh. Key design considerations include potato feed mechanism , peeling drum configuration, and waste removal system. Prototype testing was conducted using Irish potatoes with an Irish potato sourced locally. Results demonstrate the machine can peel potatoes with an average efficiency of 90% and can reduce peeling time by 70% compared to manual methods. The peeled potatoes maintain high quality with minimal flesh loss. The low-cost, user-friendly design makes the potato peeling machine suitable for small scale food processors and commercial kitchens in potato producing regions. Further research is needed to optimize machine performance, conduct economic analysis, , and explore alternative peeling technologies.
